Sausage and Vegetable Traybake
A lovely, comforting meal for all the family. Can be batch cooked and frozen
Servings: 4 people
- 10 Sausages
- 2 Peppers deseeded and sliced
- 1 Courgette chopped
- 2 tbsp Green Pesto
- 250 g Cherry Tomatoes
- 100 g Couscous
- 1 tsp Parsley
Preheat the oven to 200/180 fan/Gas 6. Put the sausages and vegetables (apart from the tomatoes) into a large roasting tin, and toss well with the pesto.
Cook for 25 minutes, before adding the tomatoes and roasting for another 15-20 minutes, until the sausages are cooked through and the vegetables tender.
Meanwhile, cook the couscous according to pack instructions. Stir in the parsley, then toss together with the cooked sausages and vegetables.
