Sausage and Vegetable Traybake

  • 10 Sausages
  • 2 Peppers deseeded and sliced
  • 1 Courgette chopped
  • 2 tbsp Green Pesto
  • 250 g Cherry Tomatoes
  • 100 g Couscous
  • 1 tsp Parsley


  • Preheat the oven to 200/180 fan/Gas 6. Put the sausages and vegetables (apart from the tomatoes) into a large roasting tin, and toss well with the pesto.

  • Cook for 25 minutes, before adding the tomatoes and roasting for another 15-20 minutes, until the sausages are cooked through and the vegetables tender.
  • Meanwhile, cook the couscous according to pack instructions. Stir in the parsley, then toss together with the cooked sausages and vegetables.
