Hearty Sausage Casserole – Slow Cooker Friendly

A lovely hearty meal perfect for those chillier days and days when you’re busy!

Equipment
- Casserole Dish
Ingredients
- 2 tbsp Olive Oil
- 1 Onion finely chopped
- 2 Celery Sticks finely chopped
- 2 Peppers finely chopped
- 6 Sausages
- 2 cloves Garlic finely chopped
- 1 tsp Paprika
- 1 tsp Cumin
- 1 tbsp Thyme
- 2 cans Cherry Tomatoes halved
- 1 Beed Stock Cube
- 1 can Butter Beans drained and rinsed
Instructions
- Put 2 tbsp olive oil in your pan on a medium heat
- Add 1 onion and cook for 5 minutes
- Add 2 celery sticks and 2 peppers and cook for 5 minutes
- Add 6 sausages and fry for 5 minutes
- Stir in the garlic, cumin, paprika and thyme and cook for 2 minutes
- Add 2 cans of tomatoes and thyme, bring to a simmer and then crumble in the beef stock cube
- Cook for 40 minutes. Stir in the butter beans for 2 minutes
- Serve with some crusty bread
