A great ‘throw everything in’ meal for the whole family. This sausage traybake can be batch cooked and frozen for another week. Great for the colder months
Sausage and Vegetable Traybake
- 10 Sausages
- 2 Peppers deseeded and sliced
- 1 Courgette chopped
- 2 tbsp Green Pesto
- 250 g Cherry Tomatoes
- 100 g Couscous
- 1 tsp Parsley
- Preheat the oven to 200/180 fan/Gas 6. Put the sausages and vegetables (apart from the tomatoes) into a large roasting tin, and toss well with the pesto.
- Cook for 25 minutes, before adding the tomatoes and roasting for another 15-20 minutes, until the sausages are cooked through and the vegetables tender.
- Meanwhile, cook the couscous according to pack instructions. Stir in the parsley, then toss together with the cooked sausages and vegetables.
